Indian Banana Boats
Ingredients
4 large bananas
4 tbsp Lemon Juice
8oz peeled prawns
1oz salted cashew nuts
3tbsp mayonnaise
1/2 tsp hot madras curry powder
1tbsp finely chopped onion
2tbsp grated desert apple
1/2 tbsp lemon juice
1tsp lime pickle (patek)
Method
Cover bananas in lemon juice and fill with mixture
Garnish with fresh coriander sprigs
Note:
The mixture can be stored for up to 3 days
